The vineyard is the esoteric heart of Antidoot. What matters is not a sellable product. In the vineyard we learn to listen. Here the soil speaks; here we learn to obey the seasons and nature's caprices. This is our classroom.
Our vineyard is a small experimental space, consisting of 500 plants, both classical varieties such as Pinot Noir and Gewürztraminer, and hybrids such as Cabernet Jura, Pinotin, Leon Millot, Regent, Cabernet Blanc and the still nameless VB Cal 6 04. We tend these plants organically, and experiment with diverse types of undergrowth. Our ideal is to combine the vineyard with a edible, permaculture garden.
Our philosophy of winemaking is one of absolute minimal intervention. No sulphites, nor any other additives; and of course indigenous yeasts. 100% fermented grape juice!
